Touchdown!

On Superbowl Sunday, to go with the Red Velvet Cupcakes I made Oreo Truffle Footballs. They looked like footballs until I got tired and just started dunking them in chocolate without a care in the world (and eyes half shut). I made some royal icing 9and 1/3 of the recipe) to make some "laces" for the footballs.  These came out bigger than I thought they were going to be so instead of going on the cupcakes I just put them in a bowl.  I am not really an Oreo fan; however, these were AMAZING and a huge hit so definitely will be made again!





OREO TRUFFLES

INGREDIENTS:





DIRECTIONS:

- Crush 9 of the cookies to fine crumbs in food processor (I used a blender and did it in batches); reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. (Don't need to seperate them if making footballs)
- Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
-  I melted the chocolate in the microwave in batches; a mug was super helpful for diping the balls in chocolate. Place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
 - Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

Fancy Sounding Frosting!

Way back in November I made these cookies; they were delicious, super soft and albeit a little bit sugary (even for me).  I would definitely make these again but a little goes along way with these.  They were huge hits. I also learned that penuche frosting is just another, fancier, way of saying brown sugar frosting :)



PUMPKIN COOKIES WITH PENUCHE FROSTING

COOKIE INGREDIENTS:









 
 
 



DIRECTIONS:

- Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
 - In a large bowl, cream together shortening, 1/2 cup brown sugar, and white sugar. Mix in pumpkin, egg, and vanilla. Sift together flour, baking soda, baking powder, cinnamon, and salt; mix into the creamed mixture. Stir in walnuts. Drop dough by heaping spoonfuls onto the prepared baking sheets.
- Bake for 10 to 12 minutes in the preheated oven. Cool on wire racks.
 
- In a small saucepan over medium heat, combine the 3 tablespoons butter and 1/2 cup brown sugar. Bring to a boil; cook and stir for 1 minute, or until slightly thickened. Cool slightly, then stir in the milk, and beat until smooth. Gradually stir in 2 cups confectioners' sugar until frosting has reached desired consistency. Spread on cooled cookies.

Pink Cookie Love!

When I made the adorable bowties and neckties for Father's Day I decided to make some cookies for my mom's birthday as well.  I made some cute birthday cupcake cookies that had a candle on top; however, the candle part could be flimsy and didn't come out right sometimes so I just cut that part of and just had a cupcake cookie.  I also made some present cookies, those need some work to look cute! Also, I made some mini hearts and sunglasses for her pool! These were all made with Pink Martini and Pearls and my Sugar Cookie Recipe.

Bowterrific Cookies Part 3!!!

As I have said before I am stubborn! I have decided to embrace this "I will not let a little sugar cookie beat me" project and instead went on a cookie cutter buying spree and ended up searching and stalking until I got these cute bow tie and neck tie cookie cutters (big and minis).  This time I decided to use Pink Martinis and Pearls  Royal Icing recipe; she also makes the most beautiful cake pops.

I ended up doubling her recipe and then making another batch. So the recipe below is enough for maybe 1/2 batch of my sugar cookie recipe.  I think this might be my recipe because it worked out really well and wasn't sticky. I will have to try it out again just to make sure it wasn't a fluke!!!  I thought some of it was coming out too thick so I thinned it well the thinner ones were the ones that weren't as dry, where the thicker dried better - totally not what I expected to happen! I ended up putting them in jars I bought for pretty cheap from Michaels for my dad and Uncles for Father's day. Also, do you see the cool gift tag cookie cutter I got! SO cute to tie it to the front of the jar.




ROYAL ICING:

INGREDIENTS:

1 lb. Powdered Sugar (does not need to be sifted)
3 Tbl. Meringue Powder
6 Tbl. Hot Water (from tap is fine)
2 Tablespoon of Lemon Extract (this is an addition by me but do it to taste)

DIRECTIONS:

- With a whisk attachment beat all the ingredients on high until fluffy. Do not under beat. Pink Martini mixes for at least 8 minutes. Put the icing immediately in a container with a tight lid to prevent it from drying out.

I then followed her directions for 10 second icing:

10 SECOND ICING:

- To get the nice smooth icing you see on the cookies it needs to be thinned. Too thin and it runs down the sides of the cookies and will not coat it well. Too thick and it will just sit there and not be smooth. (I find that this is trial and error for me and still learning)
- Add water a teaspoon at a time (sometimes I add some lemon just to keep the flavor up). Mix the water well. 

Pink Martinis and Pearls says: Pull a dollop of icing on your spoon or spatula and let it drop back down; count to 10 and if it seems to melt and disappear by 10 then you have the perfect consistency.  If there are still remanants add a touch of water. If it melts too quickly then you need to add more regular icing to give it more body. (I think last time I just put a little but more sugar in it).

 Sweet Sugar Belle: makes 20 second icing. I LOVE her way of just drawing a line in your bowl and seeing if it disappears. Works well for the 10 second icing as well.

Honestly: I would love for my stuff to look even a quarter as good as Pink Martini and Sweet Sugar Belle and love their explanations, pictures, and directions.  I really need to be better with my pictures and just not do them as I am running out the door!

Sugar Cookies Summer Style!!! Part 2!!!!!

This is a continuining series in my adventures of trying to find a sugar cookie recipe!

Okay so cookies are my albatrose..........I am really good with cookies, pies, cupcakes but not with round cakes and sugar cookies! I am stubborn and have decided that I will get this skill so I can put it in my back pocket. This includes getting recipes I am really comfortable with. I decided to try something different then my normal icing recipe and to do a royal icing recipe. After looking (really stalking) a lot of wonderful blogs (seriously, there are so many talented (patient) sugar cookie people out there and I am just not one of them) I decided to try The Sweet Adventure's of Sugar Belle's Royal Icing Recipe.  I liked this recipe but felt like it took forever to make, I do not have one of the awesome Kitchen Aid mixers. I also had trouble with getting it to dry really well but I blame that on the user and not the recipe; this is a reoccuring problem and why I started to look for a new recipe.  It was a great way to kick off the summer!

I only made 1/2 of the recipe and it was enough for my cookies. I also used lemon juice (not extract) instead of vanilla so it definitely could have been user era. Also I know my cookies will never look good as hers!

Uh-Oh!!!?!?!? Sugar Cookies Part 1......


WARNING: LONG POST............OOPS! (but wait is anyway even reading this blog :) )

You know when you find the most perfect recipe, the one that you think will answer all your baking problems, the holy grail of baking? It is such a good feeling when it works out and you think okay maybe I can do these sugar cookie recipes and make them look as pretty as Sweet Sugar Belle or Bee in our Bonnet. So then you go to grab that recipe and you cannot find it!!?!?!? All of your sugar cookie dreams come crashing down! Then after some slightly psychotic searching, which you will never admit to anyone because it will clearly end with you on a psychiatrist's couch or a friend intervention (see How I Met Your Mother's intervention episode for some hilarity), you find it! Even with some questioning (hmmmm am I sure this is it) you try it out and it works woohoo. That is what happened to me with my sugar cookie recipe. I then wrote this blog entry feeling all superior and o wait........lost it again!!!! I only knew the recipe from the picture next to it and even though I didn't find the picture again I think we are back on track now! I am seriously a hot mess!

I have used various sugar cookie recipes and for some reason I have always had a hard time finding one that works well with molds and tastes good. When I made sugar cookies for my coworker's baby shower I thought I had it but while they tasted awesome they did not stay in their shape in the oven. So then I made a new sugar cookie recipe for my friend's shower and it worked out well but then alas it went MIA. I like this recipe and it is easy to work with, even when you cut the recipe in a 1/4 so I am going to stick with it!

After reading some blogs I realized that I could make a lot of cookies and freeze them to decorate for later and this made it a lot easier when I decided to make these adorable ring cookies for a girls nite/bachellerotte get together and then for a jewelry party. One of the blogs that I read (I can't remember which one!!!)mentioned that it easier to roll and cut the dough on the slip pat sheets that go in the oven so you don't have to worry about ruining the design. This cookie cutter does not have the center cut out and while I made a few with the center left in (which is a great idea if you want to put someone's initial) I liked them best looking like a ring; so I used a circle piece of one my cake writing sets but if you had a round cookie cutter that would work well too. Once the center is cut it is harder to move them so I totally suggest just rolling and cutting it on your slip pat or wax paper, really a life saver so thank you to whoever you are!

I learned a lot in decorating these cookies between the first and second time. I used my previous icing recipe, which is delicious if you add the lemon juice and easy if you don't have meringue powder around (maybe not perfect in the setting process but it works)! When I needed to thin it I used lemon juice and a little bit more mix. I discovered that Tip #21 was perfect for doing one big circle on the band, I also piped the top of the ring and then flooded it and threw some fun sprinkles and sparkles on them.

With the left over dough I made some mini cookies, hearts and shoes, that were also a big hit.

While these are not perfect and I have a long way to go I felt like this was a good start! More adventures in sugar cookies to come.........




THE BEST ROLLED SUGAR COOKIES:

INGREDIENTS:

1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

DIRECTIONS:

- In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).

- Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.

- Bake 6 to 8 minutes in preheated oven. Cool completely.



ICING:

INGREDIENTS:
3 cups confectioners' sugar
1/4 cup margarine, softened
1 1/2 teaspoons lemon juice
3 tablespoons milk

DIRECTIONS:

- To make frosting, combine the 3 cups confectioners' sugar, 1/4 cup margarine and 1 1/2 teaspoons lemon juice in a medium bowl. Mix until smooth, adding milk 1 tablespoon at a time until frosting has reached its desired consistency.

Beating the Heat!

Okay I have written this post twice (once last year and once again this year) but I have never posted it because BOTH times I forgot to take pictures!!!!! I am not a cook, I just don't like it and I am a vegetarian. However, even knowing this Las year I decided to throw a BBQ Memorial Day weekend on my small patio. I made enough food for a small country, seriously it was ridiculous. I don't think 1/4 of the food was eaten. However, one thing that went like hot cakes was my Homemade Chocolate Chip Cookie Ice Cream Sandwiches. I am not sure if they went so quickly because it was ridiculously hot, I just love that DC is in a swamp, or because my air conditioning decided to break, or maybe it was because they were that delicious. I actually had some left over and they stayed very well in the freezer. I just made my Chocolate Chip Cookies (with minature chocolate chips) and after they cooled put some (melted because it was 1001 degrees inside my apartment) Mint Chocolate Chip Ice Cream and froze them over nite. Even after the BBQ was over I still had a lot left but they were good for the rest of the week and a great treat just to grab out of the freezer!!

O a little tip I learned from this food extravaganza: the deep, disposable lasagna containers are awesome for cooking a ton of marinated veggies on the grill. This way I didn't have to sit there and skewer for hours!

So no picture but just imagine these cookies with an ice cream scoop size of ice cream in the middle!

Happy Belated Cinco de Mayo Cookie Style

Happy Belated Cinco De Mayo!!! I actually attended a Quatro de Mayo party and wanted to make something festive so I made my Margarita Cupcakes with Lime Cream Cheese frosting; the party was on Friday nite but I brought them into work via the metro and kept them in our fridge during the day until my friend's husband came to pick them up during the day. My friend who was throwing the party was doing it to celebrate her husband's half Mexican heritage and her love for margaritas. I asked her if her husband felt Chocolate Mexican Wedding Cookies would be sacrarelig and thankuflly she said no because these came out so good and are so easy to make. The directions say to wrap the dough and let it harden for an hour but in true fashion I didn't buy enough pecans so made it in the night before and then came home for work took the dough out to let it soften for awhile and added the pecans mixed it and just went from there. They are sooooooo good and will be definitely be made again.

O if you buy one German Chocolate Bar then you will be fine! I used the blender to grate it but just remember that the blades can melt it so either do sections or just do it quickly (you can also freeze the bar if you want to).

Happy Cinco De Mayo! Now go pour yourself a Margarita!

CHOCOLATE MEXICAN WEDDING COOKIES

INGREDIENTS:

1 cup butter, softened
1/3 cup confectioners' sugar
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 cup ground pecans (I just threw them into the blender)
1/2 cup German sweet chocolate, grated (I just threw it into the blender)
3/4 teaspoon ground cinnamon1 pinch salt
1/2 cup confectioners' sugar
1/4 cup German sweet chocolate, grated


DIRECTIONS:

- In a large bowl, cream the butter and 1/3 cup confectioner's sugar until light and fluffy. Add the vanilla extract.
- In a separate bowl, combine the flour, ground pecans, 1/2 cup ground chocolate, cinnamon and salt; mix well.
- Gradually add the dry ingredients to the creamed mixture.
- Wrap dough in plastic wrap and chill 1 to 2 hours, or until firm.
- Preheat oven to 325 degrees F (180 degrees C).
- Shape the dough into 1-inch balls. Place balls 1 inch apart on an ungreased baking sheet. Bake 15 to 18 minutes, or until the cookies are firm to the touch. Cool 1 minute on the baking sheet, then transfer to a wire rack.
- For the coating, sift 1/2 cup of the confectioner's sugar and 1/4 cup of the ground cocoa into a shallow bowl. While cookies are still warm, roll them in the coating.

Happy St. Patty's Day!!!!

My guinea pigs, er co-workers, are used to getting regular cookies or cupcakes at work but after being inspired by so many talented blogs I decided to work on decorative sugar cookies. Who knew my biggest hurdle would be finding a St. Patty's day cookie cutter!?!?! Seriously Michaels! Thankfully my cousin had one that I was able to use. I also decided that there was no reason that I had to make a full batch, which is like 60 cookies, for work so I scaled my recipe back to 1/4 and it ended up making about 20 shamrocks, perfect! (recipe is in next post!) Still learning about decorating, people make it look so easy but it isn't!

Minty Deliciousness!

Since I am so far behind let's talk about Christmas...............in February! For the past few Christmases I have made boxes of cookies for neighbors and our priest at Church. For the past few years I have been using the same basic cookies and then usually added one new recipe to the box. This year I was craving some chocolate and mint (for some reason mint means the holidays to me!)

Aunt Nettie's Cookies


Thumbprint Cookies




SOFT MINT CHOCOLATE COOKIES

INGREDIENTS:

1/2 cup butter (no substitutes)
3 (1 ounce) squares unsweetened chocolate
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/4 cup buttermilk
1 teaspoon peppermint extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

DIRECTIONS:

- In a microwave or heavy saucepan, melt butter and chocolate; stir until smooth. In a mixing bowl, beat sugars and egg; add buttermilk and peppermint extract. Beat in chocolate mixture. Combine the flour, baking powder, baking soda and salt; gradually add to sugar mixture. Let stand for 15 minutes or until dough becomes firmer.

- Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes or until edges are firm. Cool for 2 minutes before removing from pans to wire racks.

Touchdown with Cookie Bars!

Back in January one of my coworkers made some cookie bars and on the morning of the Superbowl I was totally craving some so I decided to make my awesome cookie recipe. I added a bag of toffee chips and a bag of chocolate chunks to it; I cooked them for about 20 minutes but they were a little undercooked so next time I might do an extra minute or so. They were delicious!




CHOCOLATE CHUNK AND TOFFEE CHIP COOKIE BARS

INGREDIENTS

2 Sticks of butter
3/4 C. Sugar
3/4 C. Brown Sugar
2 eggs
1 tsp. vanilla
2 1/4 C. flour
1 tsp. baking soda
12 oz toffee chips
12 oz chocolate chunks


DIRECTIONS:

- Preheat oven to 350 degrees.

- Cream the butter, sugar, and brown sugar together. Then add the eggs and vanilla and mix. Next add the flour and baking soda. Finally add the chips.

- Spread as best as you can all the dough into a 9 x 13 pan. Bake for 20-24 minutes.

It's a cookie?!?! It's a brownie?? Its a brownie cookie!

I think blogger is punishing me for being such a bad blogger!!! I wrote the post but just had to add pictures and of course was slacking; wel today I came back to add the pics and the post was gone! I get it blogspot I am a bad blogger and am not worthy! However, these cookies are totally worthy (hopefully your guinea pigs are worthy of these cookies)! One nite I decided that I was going to skip the gym thanks to some really bad shin splints and I was going to make cookies, not that I ever need an excuse to skin the gym and bake cookies but hey why not use it! I was craving something chocolate and WOWSERS this recipe was totally worth it and my guinea pigs just loved it! I added peanut butter chips to the recipe. I usually bake my cookies at the low end of the time spectrum but these needed a few extra minutes. The first day I made them I probably left them in about 11-12 minutes and they were cruncy on the outside but super soft on the inside and when I made them 2 day later I baked them for a minute or so less and they were just soft all the way around so keep your eyes on them. But this recipe is definitely a keeper! ENJOY!!!!!!!!!!!!!!!!!!!!!!!!



SOFT CHOCOLATE COOKIES

INGREDIENTS

1 cup butter or margarine, softened
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup baking cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt
confectioners' sugar
1 bag of peanut butter chips (optional)


DIRECTIONS

- In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture.

- Cover and refrigerate for 1 hour or until easy to handle.(I did less than an hour)

- Roll into 1-in. balls. I used an ice cream scoop and then molded them

- Place 2 in. apart on ungreased baking sheets. Flatten with a fork if desired. Bake at 350 degrees F for 8-10 minutes or until the edges are firm. Remove to wire racks. Dust warm cookies with confectioners' sugar. (optional)

Lemon Bottles and Onesies

I am so far behind on blogging, I just don't know why. I have decided to try and update the blog because this is the easiest way to keep all my recipes at my fingertips. This post is extremly beneficial because I am in the process of planning another friend's baby shower.

For a friend's baby shower in February I decided to make onesie cookies again. I am excellent at underestimating the amount of time and the amount of work that I have to do and this was a perfect example because I was up until 4 am and back up 2 1/2 hours later trying to finish the over 100 cupcakes and an absurd amount of cookies (I think I blocked out the extra number for my own mental health). I was in pretty good shape making the cookies (both onesies and baby bottles)and then I tried the first batch of unfrosted ones and GROSS!!! They had to get thrown out and I started scouring my favorite Allrecipes for a new recipe (and now it was almost 3:30pm). I was pretty happy with this recipe except they blew up when they were baking them so I had to recut them once they came out of the oven (this could be because I used just butter) and some of the icing seemed to smudge in the bags but yet again I think my few hours of drying was just not enough.

Even though some of them were a little ugly they did get rave reviews because of the taste, the frosting and the cookies both had some lemon in them. Genious! (Thank you to whoever came up with that idea). I definitely would make these again but next time I would try and follow the recipe to a T and give myself more time for all of the frosting to dry!




SHIELA'S SUGAR COOKIES

INGREDIENTS:

1 cup margarine
1 cup shortening
1 cup white sugar
1 cup confectioners' sugar
2 eggs
1 teaspoon lemon juice
4 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt

ICING:

3 cups confectioners' sugar
1/4 cup margarine, softened
1 1/2 teaspoons lemon juice
3 tablespoons milk

DIRECTIONS:

1.Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2.In a large bowl, cream together the 1 cup margarine, shortening, white sugar and 1 cup confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in 1 teaspoon lemon juice. Combine the flour, baking soda, cream of tartar and salt; gradually stir into the creamed mixture. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto prepared cookie sheets.
3.Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
4.To make frosting, combine the 3 cups confectioners' sugar, 1/4 cup margarine and 1 1/2 teaspoons lemon juice in a medium bowl. Mix until smooth, adding milk 1 tablespoon at a time until frosting has reached its desired consistency.

COOKIE DOUGH + CUPCAKE = WOW

My officemate loves cookie dough not cookies but cookie dough. For my birthday she made me one huge cookie and undercooked it since she loves the cookie dough taste. So for her birthday I decided I had to do something involving cookies and my usual cupcakes. I just got back from 5 months in Japan so my officemates were salivating/demanding my chocolate peanut butter cupcakes but I told them it was time to expand our horizons and boy were they happy to! These were a huge hit and were excellent! I made the cookie dough the nite before and left them in the freezer until the next nite. I don't usually like using box cake but I figured there was enough "homemade" stuff that it was okay. I used tried and true chocolate frosting!







CHOCOLATE CHIP COOKIE DOUGH CUPCAKE

Ingredients
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup butter, softened
1/4 cup white sugar
1/2 cup brown sugar
1 egg
2 teaspoons vanilla extract
1 cup miniature semisweet chocolate chips

1 (18.25 ounce) box yellow cake mix
1 1/3 cups water
1/3 cup canola oil
3 eggs


DIRECTIONS:

- Whisk together the flour, baking soda, and sea salt; set aside. Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; mixing just enough to evenly combine. Form the dough into tablespoon-sized balls; place onto a baking sheet, and freeze until solid, about 2 hours.

- Preheat an oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.

- Beat 3 eggs in a large bowl with an electric mixer to break up. Add the cake mix, water, and canola oil; continue beating for 2 minutes on medium speed. Spoon into the prepared cupcake liners, filling each 2/3 full. Place a frozen cookie dough ball on the top center of each cupcake.

- Bake in the preheated oven until a toothpick inserted into the cake portion of the cupcake (not the cookie dough ball) comes clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.


CREAMY CHOCOLATE FROSTING

INGREDIENTS:

2 3/4 cups confectioners' sugar
6 tablespoons unsweetened cocoa powder
6 tablespoons butter
5 tablespoons evaporated milk (I used regular milk)
1 teaspoon vanilla extract

DIRECTIONS:

- In a medium bowl, sift together the confectioners' sugar and cocoa, and set aside.
- In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with evaporated milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar. ( I used more milk)

Baking with Kids!

This past Wednesday I baked with my 4th grade CCD students. Thankfully 2 of the moms helped me, otherwise I would not have survived baking with 10 - 10 year olds! The reason for this madness was Operation Baking Gals. This is my second time doing this and I think this is a wonderful organization since I love to bake and now I can do it for a good cause. I hope the solider Tim and his friends enjoy the boxes of cookies and the cards that they made!

Peanut Butter Chocolate Chip Cookies


Peanut Butter Cup Cookies


Oatmeal Raisin Cookies (recipe below)

OATMEAL RAISIN COOKIES

INGREDIENTS:

1 cup shortening (I used butter)
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups old-fashioned oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts ( I left the walnuts out)
1/2 cup golden raisins (I used regular raisins)

DIRECTIONS:

- In a large mixing bowl, cream shortening and sugars. Beat in eggs and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture. Stir in walnuts and raisins.
- Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets.
- Bake at 375 degrees F for 10-12 minutes or until golden brown. Remove to wire racks to cool.

Black and Whites AKA NY Cookies!

I am from New York and haven't lived there for over 11 years but I still miss the great food! A fantastic cookie from NY are the Black and Whites, I love these even though they are dryer then your normal cookie. When looking at recipes I learned that people actually called these NY Deli Cookies, who knew! For the office Cookie Swap I decided to go out of my comfort zone and to try a new cookie. Hey with a room full of guinea pigs I couldn't resist.

My first batch came out better then my second batch, when I tried to make them thicker and a little less dry they just came out huge and flat; sort of like a pancake. I got the recipe from All Recipes and part of the reason why I love that website are the comments from other bakers. Based on numerous recommendations I changed the original recipe and I think it came out pretty well. Next time I might change the chocolate a little bit but everyone loved them.



BLACK AND WHITE (AKA NY COOKIES)

INGREDIENTS:

Cookies:
1 cup unsalted butter
1 3/4 cups white sugar
4 eggs
1 cup milk
½ teaspoon vanilla extract
1 teaspoon lemon extract
2 1/2 cups cake flour
2 1/2 cups all-purpose flour
1 teaspoon baking powder
¾ teaspoon salt


Frosting: * You will halve the recipe for white and black frosting

6 Cups confectioners sugar
4 Tbsp light corn syrup (for consistency)
2 TBSP butter (for shine)
3 tsp clear imitation vanilla extract
1/4 to 1/3 C. cocoa powder (recipe called for Dutch processed I used Hersheys)
Water for consistency

DIRECTIONS:

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, cream together butter and sugar until smooth. Beat in eggs one at a time, then stir in the milk, vanilla, and lemon extract. Combine cake flour and all-purpose flour, baking powder, and salt; gradually blend into the creamed mixture.
-Take 1/4-1/3 of a cup of batter and drop them on the sheet. Take back of a spoon to swirl it into a nicely formed circle about 1" thick. Bake for about 11-14 minutes. Cool completely.
- Brush off all excess crumbs from bottom of each cookie. (over sink)

- Make frosting in 2 batches, white being first: 3 Cups confectioners sugar, 2 Tbsp light corn syrup, 1 TBSP butter, 1 1/2 tsp clear imitation vanilla extract, and enough hot water to achieve desired consistency. Mix with a wire whisk until smooth. Ice slightly over 1/2 of each cookie; you can spoon the icing and then use an offset spatula to ice) and let set until firm (approx. 20 mins.).

What to do with all of those cookies??

It's that time of year again! The time of year when you get suckered by cute little girls and buy more cookies then you ever need..........yup it is Girl Scout Cookie time!!!! I have a soft spot in my heart for Girl Scout cookies, I used to be a Girl Scout (I actually have my Gold Award). I was an extremely successfull cookie seller because when people told me that they couldn't buy them because they were on a diet I would tell them that they froze very well and they could have them after diet was over! OOOO how sweet I was!!

So now I am the one who is being suckered and I decided instead of sitting down with a box of Thin Mints and polishing them off in one sitting I would bake with them. So after doing a google search I found some great recipes, especially from the Girl Scouts of Kentuckania.

I am in love with this recipe, Mint Delight! It is fantastic and delicious - I actually froze it inorder to bring it into work and when it was frozen and defrosting it was good but once it defrosted it was AMAZING!! I was not a fan at first but after it was completely defrosted I totally was.

I am not a purist, to my mother's chagrin, and when I can I use low fat or reduced fat ingredients and it worked really well in this recipe. I forgot the recipe when I went into the store (not the first time and not the last time) and I had to guess the package sizes. I knew I needed the large box of chocolate pudding; however, the large size at the store was 5.9 oz and not 8 oz, it worked out well. Also, I wasn't sure how much cool whip I needed so I bought a large 12 oz and a smaller container. It was still frozen when I needed the first cup and I ended up using the large and a little bit of the second smaller container; however, I think if it was actually defrosted I could have gotten away with one.

This recipe is fantastic, it doesn't seem like it is going to work out when you are making it but as they say the proof is in the pudding!!

MINT DELIGHT

INGREDIENTS:

1 pkg. of Thin Mint cookies (crushed)
3 tbsp. butter or margarine (melted)
1 pkg. (8 oz.) softened cream cheese
2 pkgs. (5.9 oz. size) instant chocolate pudding
3 cups milk
4 cups whipped topping


DIRECTIONS:

- Combine cookies with melted butter or margarine, (save ¼ cup of cookies for topping). Press cookie mixture on bottom of 13” x 9” pan. Chill.
- Combine cream cheese with 1 cup whipped topping. Spread over cookie mixture. Chill for 15 to 20 minutes.
- Prepare pudding with 3 cups of milk and pour over cream cheese mixture. Chill for 1 hour or until ready to serve.
- Top with remaining whipped topping and Thin Mint cookie crumbs. (I put this on top and let it sit in the freezer over nite)

Baking for a Good Cause!

Awhile ago I came across this wonderful group called Baking GALS. This group is run by Lyndsay and she gets group leaders to host soldiers who are deployed abroad. Each host recruits up to 20 bakers and in a week to two week period everyone ships out their goodies and then bombards the soldier with baked goods. So many goods he or she has to share with their fellow troops.

I wanted to do this for awhile and thought that this would be a great thing to do with my 4th grade religion students; however, 2 weeks of snow in DC changed that plan! So I baked these on my own and will sign up for a future round to bake again.

This was my first time baking for soldiers so there are some things I will do differently next time. For now I hope the Lt in Afghanistan, who is responsible for Logistics and Transportation, and the soldier from Indianapolis, whose second was born while he was away, enjoy the cookies.

I'm back and with a fantastic cookie!

WOW!!! I haven't blogged in almost a year - 2009 was CRAZY!! I don't know if anyone actually reads this blog but in the past year I realized this blog is really helpful to me to get some of my favorite recipes when I am on the road. I might not be blogging as much as in my heyday but here we go again....................

One of the tasks that kept me busy in 2009 was a Holiday Cookie Swap at work that I was in charge of. My favorite recipe from the swap was my boss' cookies who are named after her aunt. I love these and made them for some Christmas Cookie gifts. They are supposed to be a little logs but my batch came out flat on the bottom. Enjoy!!!!!

AUNT NETTIE’S CHOCOLATE COOKIES


INGREDIENTS:

2 1/4 cups of sifted flour
1/2 tspn salt
3/4 cups (1 1/2 sticks) margarine, softened (I used butter)
3/4 cups sugar
1 egg
1 1/2 tspn vanilla
1 (6 oz)pack semisweet chocolate chips (mini chocolate chips work really well but you can use others)
2 cups chopped walnuts (you can also use almonds)

CHOCOLATE COATING INGREDIENTS:
1 large (12 oz) package of chocolate chips
1/4 cup margarine (I used butter)

DIRECTIONS:

- Preheat oven to 350 degrees
- Mix flour and salt
- Beat margarine, sugar, egg, vanilla in large bowl until well mixed
- Blend in flour, then stir in chocolate chips
- Shape dough into 2 by 1/2 inch logs (use a little flour on hands if dough is sticky)
- Place on ungreased cookie sheet and bake for 12-15 minutes
- Cool on wire rack

- Once cookies are cooled then melt 1 large package of chocolate chips (12 oz) and 1/4 cup margarine
- Dip ends in chocolate coating and roll ends in nuts.
- Place on wax paper until set.

Thumbprint Goodness!

One of my favorite blogs is Katie's and when I was looking for recipes for my Christmas Cookie Boxes I knew she would have a great one. And I was right her Raspberry Almond Thumbprint Cookies were delicious! I made one batch with Raspberry Preserves and another with Blueberry Preserves and they were both great, except mine didn't come out as cute as Katie's. Thanks Katie!






RASPBERRY ALMOND THUMBPRINT COOKIES

INGREDIENTS:

1 1/2 c. butter, softened
1 c. granulated sugar
2 eggs
1 tsp vanilla extract
3 1/4 c. all-purpose flour
1 c. almonds, ground coarsely
1 c. raspberry preserves


DIRECTIONS:

-In bowl of stand mixer, combine butter and sugar and beat on high until light and fluffy in color, about 3 minutes.
-Add eggs and beat to combine well.
-Add vanilla and combine.
-Scrape down sides of bowl, slow mixer to low and add flour and almonds.
-Beat to combine (mixture will be coarse), remove bowl from mixer and scrape down sides, making sure all mixture is thoroughly combined.
-Scoop dough out into tsp sized rounds, rolling into balls. Place on cookie sheet at least 1 inch apart.
-Place cookie sheet in fridge for 15 to 20 minutes.
-Preheat oven to 375 degrees and line cookie sheets.
-Make an indentation into top of cookie with finger.
-Using a spoon, place a small amount of jam into indentation of each cookie.
-Place into oven and bake until starting to turn golden brown, about 8-10 minutes.
-Remove from oven and let cool before serving.
